Whether you’re in a relationship or not, there is no reason not to celebrate Valentine’s Day. You can call it anything you want but don’t miss a reason to have a wonderful meal! Here’s what I’m cooking up for the two of us!
Like everyone, I’m trying to be healthy. Running 30 km is a lot “easier,” (I use that term extremely loosely) if you’re in better health. We’re just trying everyday to live a little bit healthier. So that means not skimping on deliciousness, but cutting extra, unneeded calories when possible. This recipe is taken from one of my FAVE cookbooks of all time Weight Watchers in 20 Minutes!
Potato Pierogies With Wild Mushroom Sauce: Serves 4 (perfect for leftovers the next day)
- 1 tsp extra virgin olive oil
- 2 cups of sliced mixed mushrooms eg. white, oyster, and cremini
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1 tbsp all purpose flour
- 2/3 cup skim milk
- 1/4 cup reduced sodium vegetable broth
- 1 (1-pound) package of frozen low fat pierogies (thawed)
- 2 tbsp light sour cream (fat free if possible)
Heat the oil in a large skillet over medium-high heat. Add the mushrooms, thyme, salt and pepper; cook, stirring until tender and lightly browned about 4 minutes.
Sprinkle the flour over the mushroom mixture, stirring to combine. Gradually, add the milk and broth, stirring until smooth. Add the pierogies and bring to a boil. Remove the skillet from heat and stir in the sour cream.
1 1/2 cups is 233 calories. This can be refrigerated up to 4 days! Feel free to add extras such as crumbled bacon and chives but be aware that this will increase the calorie intake.
